Barley stuffed peppers: my first home-cooked meal

Well, I should announce the milestone I had a couple weeks ago. I cooked my first dinner from scratch at my new house.

No, it’s not the first time I’ve ever cooked and no, I haven’t been putting it off because I’m intimidated by my kitchen. (OK, the second one’s only half true.) But yes, it was a bit of a feat.

First of all, I haven’t collected any sort of “cooking stuff,” like ingredients. Secondly, I haven’t really collected any sort of “cooking stuff,” like cooking utensils or measuring thingies.

And I feel like I’m in perpetual shock over what I don’t have.

And how much I don’t have still, even after all this time.

I was well aware I didn’t have any cooking ingredients, so I planned ahead and brought my Simple Suppers cookbook to work in order to choose a recipe on my lunch break. After work I shopped for ingredients and by 6 p.m. guests were over and dinner was on its way.

Regardless of missing simple things like measuring cups/spoons, a frying pan, a cooking sheet, and running into several people at the grocery store who had no idea what vegetable round ground was or where to get it, etc., with Jen’s creative help and a bit of improvisation, my first recipe turned out marvelously.

The peppers were great, but definitely took an hour to prepare/cook and probably needed an appy to help stave the starvation-level hunger pangs we were up against. And I definitely don’t know what to do with the leftover ingredients, except for stock up for the next time I feel the urge to cook.

All in all I’d say it was a positive experience. However, until I’m a bit more well-stocked in the kitchen (and a bit less afraid of it), I will probably spread out my cooking-from-scratch adventures.
