I found a great-looking slow cooker recipe called Creamy Chicken and Mushrooms from Home-Tested Slow Cooker Recipes.
It’s a nice-looking and easy to use cookbook and there are many options for meat dishes as well as no-fuss sides, soups, dips and sauces, and pasta/rice. Basically, using this cookbook I could make anything.
Slow Cooker Creamy Chicken and Mushrooms
I decided since the cookbook was so straightforward, I would find a recipe where I didn’t need to get any more ingredients! I’m so tired of shopping!
Creamy Chicken and Mushrooms was the obvious choice because the picture makes it look tasty. I started preparing the chicken with the spices (salt, pepper, and paprika…no big deal but I Shake ‘n Baked it anyway because I didn’t want to touch the chicken more than I needed to), then I alternated layers of chicken, bouillon, mushrooms, and celery. And covered it in white wine and water. Yum!
It was supposed to cook on low for five to six hours. However, I have to work for eight-and-a-half hours plus commuting time. Therefore, the meal was “warming” for a couple hours before I could get to it. I had to mix the gravy creamy sauce and rice before I could eat and may or may not have rushed it since I was starving.
Anyway, I garnished the meal with fresh parsley (from my limping garden) and thought it was…OK. Kind of boring. Bland even. Which is too bad because it looked so tasty. Anyway, the leftovers lasted me days and days so I had it every day last week for lunch. I was kind of glad to see the end of the leftovers this time around.
