I got this particular tuna casserole recipe from Home-Tested Slow Cooker Recipes and is titled Mom’s Tuna Casserole. Clear and to the point.

Well, I can’t relate per se. My mom never really made tuna casserole. I mean, yes we had tuna and casserole but not like this. This is, like, gourmet tuna casserole. Or something. I don’t know.

Anyway, I was pretty excited to try some tuna variations (normally I don’t know what to do with tuna except add mayo and slap it on some bread) so I mixed ‘er up and decided to have it for lunch this past weekend. The instructions were two sentences long. Hah! Simple!

And I so didn’t screw it up. It was amazing.

Since my perfect plan was to have it for lunch I realized I would have to put the dish on to cook at 4 a.m. Whoops. My husband thought it was a terribly funny joke and dared me to get up at that hour but I’m not so silly. I just figured I’d have a late lunch or something.

But, as it turned out, I awoke at 5:30 a.m. and groggily remembered the casserole waiting in the fridge. And then when I arrived home with two point five hours to spare on the timer I took a look and realized—ooch—the sides were burning. I thought slow cookers weren’t supposed to burn things! Since it was still too early for lunch I simply turned off the slow cooker and heated it briefly right before lunch.

At the last minute I decided to toast a hamburger bun and make a sloppy joe style lunch for myself with my mini carrots from the garden and some leftover plain chips.

I think I decided to do the bun thing because there’s a sloppy joe recipe right below the tuna one. Subliminal messages anyone?

Anyway it was awesome and I’m not freezing any of it because I want to eat it forever.
